Spaghetti with Clam Sauce

 

Serves 2.

Ingredients:

1/2 pound spaghetti or angle hair pasta

1 tablespoon salt

 

For sauce:

2 tablespoons extra virgin olive oil

1 large clove garlic, minced

1 can petite diced tomatoes

1/4 cup white wine

1 6.5 ounce can minced clams in juice

Salt and pepper to taste

1 pinch dried red pepper flakes

 

Topping:

Parmesan or Romano cheese

 

Instructions:

Place olive oil in small saucepan. Add minced garlic and cook slightly. Pour tomatoes and white wine into pan with oil and garlic. Partially open the top of the clam can and pour clam juice into pan as well. Add salt and pepper to taste. Add red pepper flakes. Let sauce simmer for 15-20 minutes while you are making the spaghetti. After 15-20 minutes, add minced clams and let cook for another 5 minutes.

Bring large pot of water to boil. Add 1 tablespoon salt. Add spaghetti and cook for 5 minutes, or until desired tenderness.

Plate spaghetti and add sauce. Sprinkle with cheese if desired.
