Sopapillas Deeeelllliciosos

 

Ingredients:

2 3/4 cup flour

1 tablespoon baking powder

1 tablespoon sugar

1/4 teaspoon salt

1 egg

2-3 tablespoons butter (soft)

1 cup milk (room temperature)

Several cups of canola oil

1-2 cups of sugar (to sprinkle on cooked sopapillas)

Optional : cinnamon; honey; vanilla ice cream

 

Instructions:

Mix together all ingredients in a large bowl. Knead dough for 5 minutes. (Dough will be sticky. Sprinkle flour on hands and dough to keep dough from sticking to hands.) After kneading, let dough rest in the bowl for 15-45 minutes.

When you are ready to cook the sopapillas, put 2-3 cups of canola oil in a medium-sized pot. Heat the oil to 360-370 degrees. (Tip: If you don't have a thermometer, use a piece of the dough to test the oil—the oil is hot enough if the dough floats in the oil.)

Pinch off a small portion of the dough and shape into a ball (about the size of a golf ball). Using a tortilla press or your hands, flatten the ball into a pancake-like shape. Drop each pancake-shaped piece of dough into the hot oil. The sopapilla should float in the oil as it is cooking. If it falls to the bottom, the oil is not hot enough. If it browns to quickly or burns, the oil is too hot. Make adjustments to the oil temperature as necessary.

Using tongs, flip the sopapilla so it cooks on both sides. Remove the sopapilla from the oil when both sides are lightly browned. While still warm, sprinkle with sugar (and cinnamon, if desired). Serve with vanilla ice cream and a squeeze of honey. ENJOY!!
