Melt-in-Your-Mouth Scones
Yields 8 scones .
Ingredients:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/4 cup white granulated sugar
2 sticks unsalted butter (cold, cut into cubes)
2/3 cup buttermilk
3/4 cup chopped nuts (if desired)
3/4 cup dried cherries, currants, or chocolate chips
For topping:
3 tablespoons white granulated sugar
1/2 teaspoon ground cinnamon (if desired)
Instructions:
Preheat oven to 375 degrees F.
Line baking sheet with parchment paper
In large bowl, stir together flour, sugar, powder, and soda. Pour into food processor and add butter cubes. Pulse the food processor until the mixture looks like cornmeal. Pour mixture back into the bowl, and add nuts, chocolate chips, or other desired extras. Pour in buttermilk. Mix until no dry flour is visible; dough will be sticky.
Turn the dough onto a lightly floured surface and pat into 1-inch-thick round. Cut round into eight wedges. Transfer wedges to parchment-lined baking sheet. Sprinkle with cinnamon and sugar mixture. Bake about 18-20 minutes. Cool and serve.
