Super Easy Salad Boats

 

Makes 30 hors d'oeuvres .

 

Ingredients:

1 large red apple (preferably Braeburn), cored and cut into 1/8-inch dice

3 ounces blue cheese, crumbled

3 Tablespoons sweet vinaigrette

1 Tablespoon fresh lemon juice

Salt to taste

5 Endives – the larger ones

½ cup coarsely chopped pecans

 

Instructions:

In a medium bowl, combine apple, blue cheese, vinaigrette, pecans, and lemon juice. Stir gently to combine. Season to taste with salt.

Mound a small spoonful of the apple mixture onto the core end of each Endive leaf. Sprinkle with pecans and serve.
