Roasted Red Potatoes

 

Serves 4-6 .

 

Ingredients:

20 small red potatoes, cleaned and quartered

½ tablespoon fresh rosemary, minced (optional)

½ tablespoon fresh thyme, minced (optional)

4 (approx.) tablespoons olive oil

Salt and fresh ground pepper to taste

 

Instructions:

Preheat oven to 450 F.

Place all ingredients in a large bowl and toss well. Add salt and pepper to taste. Place potatoes in a single layer on a baking sheet. Place in 450 degree oven for 20-25 minutes, turning potatoes once if needed.

Serve immediately.

Marie's tip: If you don't have time to pick up fresh herbs (or are serving the potatoes with a dish that has clashing flavors), just use salt and pepper. The potatoes will still taste great.
