Cucumber Raita

Serves 4-6.

 

Ingredients:

1 cup plain low-fat or fat-free yogurt

1 small cucumber or half large cucumber, shredded

1 teaspoon honey

1/3 tespoon salt

1/2 teaspoon toasted cumin seeds

Pinch of paprika or cayenne pepper powder (optional)

 

Instructions:

In small non-stick pan, toast cumin seed until dark. (When the start to pop, you'll know they are properly toasted.) Quickly remove from heat and cool in a plate.

In a small bowl, add all ingredients (includig cooled cumin seeds) and stir.

Keep cool until ready to serve.

Serve cold with Curry and rice. Also tastes great as a dip with veggies or chips, or on salads.
