Pumpkin Bread

Yields 3 loaves.

Ingredients:

4 eggs

2 cups sugar

1 cup brown sugar

1 cup canola oil

2/3 cup evaporated milk

3 1/2 cup flour

1 (16 oz.) can pumpkin

1 teaspoon salt

1 teaspoon baking powder

2 teaspoons baking soda

1 Tablespoon cinnamon

1 teaspoon nutmeg

 

Instructions:

Preheat oven to 350 degrees F.

In large bowl, beat eggs, sugars, oil, and evaporated milk. Add pumpkin and blend.

In separate bowl, combine dry ingredients. Mix well.

Add dry to wet ingredients and beat until combined.

Bake in 3 greased small loaf pans (approx. 8 x 3 x 2 in.) for 45 minutes.

Cool for 15 minutes. Serve with low-fat cream cheese if desired.
