Pita Triangles

Yields 48 triangles.

Ingredients:

4 whole wheat pita breads

1/4 cup extra virgin olive oil

Salt to taste

Instructions:

Preheat oven to 350 F.

Using kitchen shears, cut around the rim of the pita breads to give you two haves for each bread (8 total). Cut each halve into 6 triangles. Spread the triangles on a foil-lined baking sheet, smooth side down. Brush the top of each triangle with olive oil and sprinkle with salt.

Bake triangles about 6 minutes. They should be crisp and slightly brown. Remove from oven. Flip triangles. Brush smooth side with oil and sprinkle with salt. Bake again for 6 minutes, until fully toasted. Cool before serving.

Serve with Yummy Hummus or other dip, or on the side of a Greek salad.

Note: These can be made a couple of days in advance. Just be sure to store them in a sealed bag.
