Pinto Beans with a Kick

Note from Marie: I love these beans because, even though you use canned beans, you end up with a side dish that bursts with flavor and ends with a bite. The Heavenly Jalapenos are just what you would hope for -- heavenly and hot. When warmed with the beans, they add a gentle but memorable kick. And the fresh cilantro and crunchy bacon leave you craving more. My dad is known for making a huge pot of beans from scratch. (Frankly, I don't have the patience.) So I said to my dad when I made this recipe for the first time: "Dad! You've gotta try these beans!" He took a bite. And another. And another. Then he looked back up at me innocently and said, "Do I have to stop?"

Serves 6.

Ingredients:

Two 15-ounce cans pinto beans

2-3 tablespoons roughly chopped Heavenly Jalapenos

3 tablespoons roughly chopped cilantro

4 slices bacon (use microwave bacon to save time!!)

 

Instructions:

Place beans in medium-sized pot, and add jalapenos. Heat over medium heat until warm.

Microwave bacon while beans are warming. Chop cooked bacon into small pieces.

Pour beans into bowl for family style serving, or individual ramekins. Garnish with bacon pieces and cilantro.
