Peanut Butter Chocolate Chip Cookies

Makes 1 1/2 dozen large cookies.

Ingredients:

1/2 cup white sugar

1/2 cup packed brown sugar

1/2 cup unsalted butter, softened

1/2 cup peanut butter

1 large egg

1 1/4 cup all-purpose flour

3/4 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup milk chocolate chips

 

Instructions:

In large bowl, beat sugar, butter, peanut butter, and egg. Beat in remaining ingredients except chocolate chips. Once mixture is thoroughly combined, mix in chocolate chips (by hand, if you need to).

Cover and place in freezer for about 45 minutes, or freezer for 1-2 hours.

Heat oven to 375 degrees F. Line cookie sheet with parchment paper.

Shape dough into balls (about 1 1/2 inch thick). Place about 3 inches apart on ungreased, parchment-paper covered cookie sheet.

Flatten each ball with the tines of a fork (dipped in flour) to make a crisscross pattern. Bake until light brown, 9 to 10 minutes.

Cool for 2 minutes. Then remove from cookie sheet and place on cookie drying rack for additional cooling.

Serve warm with cold milk! Yum!!
