Oven-Roasted Vegetables

 

Serves 4-6 .

 

Ingredients:

1 medium zucchini, cut into slices

1 medium summer squash, cut into slices

8-10 small red potatoes, cleaned and halved or quartered

3 medium carrots, peeled, halved, and sliced into sticks

2-4 tablespoons extra virgin olive oil

½ tablespoon fresh rosemary, minced

½ tablespoon fresh thyme, minced

Salt and fresh ground pepper to taste

 

Instructions:

Preheat oven to 450 F.

Place all ingredients in a large bowl and toss well. Add salt and pepper to taste. Place all vegetables in a single layer on a baking sheet. Place in 450 degree oven for 20-25 minutes, stirring vegetables occasionally.
