Goat Cheese Mashed Potatoes

 

Serves 4-6.

 

Ingredients:

2 pounds Russet or Yukon Gold potatoes, peeled and diced

1 teaspoon salt, plus extra for seasoning

4 tablespoons unsalted butter (1/2 stick), melted

1 cup milk, warmed

6 ounces goat cheese

Salt and pepper to taste

 

Instructions:

Place potatoes and salt in large pot of water. Water should cover potatoes by about 1 inch. Bring to boil over high heat, reduce to medium-low, and simmer for 20-30 minutes, or until potatoes are tender. Drain the potatoes.

Mash potatoes in a large bowl. Add butter, milk, goat cheese, salt and pepper. Mash until combined. Serve hot.
