Holy Guacamole

Note from Marie: I call this "Holy" guacamole because -- in Texas -- good, homemade guacamole is an especially treasured appetizer. When I make it before dinner, it is usually gone in about 15 minutes. Although I highly recommend using fresh tomatoes, onion, peppers, and cilantro, if you happen to be in a rush, you can just mix in some of your favorite salsa with the avocados. If you do choose to use salsa instead of fresh ingredients, still add the lime juice, which will prevent the avocado from turning brown. Whichever way you decide to make this appetizer, I know your guests will enjoy it. Use baked tortilla chips if you are watching your calories.

Serves 4.

 

Ingredients:

2 large avocados, peeled and diced

1/2 cup seeded tomato, diced

1/4 cup fresh cilantro, chopped

1/2 cup white onion, finely chopped

1-2 jalapenos (depending on desired heat), diced

Juice of 1 lime

Kosher salt to taste

 

Instructions:

Mash avocado. Add remaining ingredients. Stir to combine.

Serve immediately with tortilla chips.
