Simple Green Beans with Toasted Pine Nuts

Serves 4 as a side dish.

 

Ingredients:

1 pound fresh green beans

2 tablespoons extra virgin olive oil

Sea salt, to taste

1/4 cup pine nuts

 

Instructions:

Bring a pot of water to boil.

Rinse green beans and trim away their stems. Boil the beans just until tender (4-5 minutes) over high heat. Drain well.

Toast pine nuts -- either in a dry skillet (watch them, they will burn!) or a toaster oven until lightly brown and fragrant.

Spread the green beans on a platter and let them dry for 1 minute. While the beans are hot, drizzle with olive oil and sprinkle with salt.

Add pine nuts on top. Toss gently with two forks. Serve immediately.
