Greek Salad in a Whole Wheat Pita
Yields 2 pita halves .
Ingredients:
1 tablespoon Dijonayse (or mayonaise or mustard)
1/2 cucumber, thinly sliced
1 tomato, thinly sliced
1/2 cup crumbled feta cheese
1/4 cup black olives, pitted and sliced
2 teaspoons fresh oregano, minced
1 tablespoon extra virgin olive oil
2 teaspoons white balsamic vinegar
Salt to taste
Freshly ground pepper to taste
1 cup baby spinach leaves
2 whole wheat pita halves
Banana peppers (if desired)
Instructions:
Spread Dijonaise (or mayo or mustard) inide the pita.
In medium-sized bowl, whisk oil, vinegar, salt, pepper, and oregano. Add spinach leaves, feta cheese, and olives. Toss to coat.
Place mixture inside the pita. Add tomatoes, cucumbers, and banana peppers.
Serve immediately.
