Garlic Roasted Shrimp Cocktails
Serves 4-6 .
Ingredients:
1 ½ pound shrimp (16-20 count), peeled
2 cloves garlic, finely chopped (about 1 tablespoon)
2 tablespoons extra virgin olive oil
½ teaspoon salt
¼ teaspoon black pepper
Cocktail sauce
Horseradish
Instructions:
Heat oven to 450 degrees F.
Peal, de-vein, and wash shrimp. In large bowl, whisk olive oil, salt, and pepper. Add shrimp and toss to coat.
Spread shrimp on a baking sheet in single layer. Roast for 3 minutes and then turn. Continue roasting (about 2-4 minutes) until shrimp are opaque and firm. Transfer shrimp to shallow dish and refrigerate. When the shrimp are thoroughly chilled (about 2 hours), serve with cocktail sauce. Add horseradish to spice up the sauce.
