Everything Omelette

Serves 1 (multiply for more!).

Ingredients:

2 tablespoons unsalted butter

3 eggs

2 slices roasted turkey (from the deli), cut into small strips

8-10 pickled jalapenos

2 large mushrooms, washed and cut into small pieces

1 slice tomato, cut into small pieces

2 slices avocado, cut into small pieces

1/8 cup cheddar cheese, grated

Salt and pepper to taste

 

Instructions:

In medium-sized skillet, melt 1 tablespoon butter over medium heat. In separate bowl, whisk eggs and season with salt and pepper. Pour eggs into skillet and let set.

In separate skillet, melt 1 tablespoon butter. Add sliced turkey, mushrooms, and jalapenos. Cook over medium heat until turkey is slightly brown and mushrooms are soft.

Using spatula, lift edges of omelette up and let uncooked eggs drain underneath. Continue to cook until entire omelette is cooked. Then, using a spatula, flip the omelette so that the topside gets browned.

Remove omelette from pan. Pour turkey, mushrooms, and jalapenos on one side of the omelette. Fold the other half over the top.

Top with grated cheese. Microwave to melt cheese for 30-45 seconds. Remove from microwave. Add chopped tomatoes and avocados.

Serve immediately.
