Easy Veggie Sandwich
Serves 1 (multiply for more!).
Ingredients:
2 slices whole wheat bread
1 tablespoon butter
2 slices mozzarella cheese
3 slices avocado
1 tablespoon light blue cheese dressing
1 lettuce leaf
1 slice tomato
5 slices mushrooms, washd and dried
Instructions:
Heat medium skillet over medium heat. Place 1 tablespoon butter in pan. Place both pieces of bread in the melted butter. Toast one side of each piece until nicely browned. Remove from skillet. Spread blue cheese dressing over non-buttered sides of bread. Add mushrooms, avocado, tomato, cheese and lettuce.
Serve immediately.
