Dreamy Creamy Spinach

 

Serves 4 .

 

Ingredients:

15 ounces baby spinach leaves, washed and dried

½ cup minced white onion

2 teaspoons all-purpose flour

¼ teaspoon salt

1/8 teaspoon freshly-grated nutmeg

½ cup milk

½ cup cream cheese

1 tablespoon butter

 

Instructions:

Cook spinach for 7 minutes. Drain in colander and squeeze out excess water.

In large sauce pan, melt a pat of butter. Sauté butter and onions for 2 minutes. Add flour, salt, nutmeg, stirring well. Cook for about 30 seconds. Add milk and cheese; cook until thick. Add spinach. Cook for another minute or two. Serve immediately.
