Curried Chicken Salad Sandwiches

Serves 4.

Ingredients:

1 pre-cooked rotisserie chicken

3-4 heaping tablespoons light mayonnaise

1/4 cup dried cranberries ("Craisins")

1/4 cup red grapes, quartered

1/4 cup pecans, roughly chopped

1/4 cup celery, minced

Juice of 1/2 lime

Yellow curry powder, to taste (about 1 tablespoon)

Kosher salt and freshly ground pepper to taste

White or wheat sliced bread

 

Instructions:

Using a knife, remove breast meat from pre-cooked chicken. Chop the meat into small pieces. (Use dark meat too, if you don't mind the added fat and calories.)

Add chopped meat to large mixing bowl. Add 2 tablespoons of mayonnaise, and then 1 or 2 more if needed and depending on your preference. Add cranberries, grapes, pecans, and celery. Stir so that all ingredients are coated with the mayonnaise. Squeeze in the juice of 1/2 lime. Add curry powder, salt, and pepper to taste. Stir again until all ingredients are covered in the curry. Finished salad should have a nice yellow color.

Serve on white or wheat sliced bread, or on a bed of butter lettuce.
