Sunrise Coffee Cake

Serves 8-10.

Ingredients:

1 1/2 cups all-purpose flour

3/4 cup white sugar

2 1/2 teaspoons baking powder

3/4 teaspoon salt

1/4 cup canola oil

3/4 cup milk

1 egg

2 teaspoons vanilla

1 teaspoon almond extract

 

Topping:

1/2 cup brown sugar

1/4 cup all-purpose flour

1 teaspoon cinnamon

1/4 cup finely chopped pecans

3 tablespoons cold unsalted butter

 

Instructions:

Preheat oven to 375 degrees F. Grease round 9-inch cake pan.

In large bowl, mix dry ingredients. Add oil, milk, egg, and vanilla. Beat on high for 1 minute. Pour batter into greased pan.

Prepare topping by mixing all ingredients (except pecans) in food processor until it has the texture of cornmeal. Pour into medium-sized bowl. Add pecans and mix with a spoon. Sprinkle topping over batter.

Bake 25-30 minutes, or until toothpick inserted into the center of the cake comes out clean.

Serve warm.
