Peach n' Berry Summer Cobbler

 

For fruit center:

¼ cup white granulated sugar

¼ cup light brown sugar

1 tablespoon cornstarch

½ cup water

1 tablespoon lemon juice

2 cups sliced peaches (peeled, and preferably fresh)

2 cups blueberries (frozen or fresh)

 

For dough:

2 cups all purpose flour

1 cup white granulated sugar

3 teaspoons baking powder

1 teaspoon salt

1 cup milk

1 stick butter, very soft

 

For topping:

2 tablespoons sugar

1 teaspoon cinnamon

1 teaspoon nutmeg

 

Instructions:

Preheat oven to 375 degrees F.

Place peeled peaches and blueberries in a deep, oven-proof casserole dish.

Combine in saucepan white and brown sugars, cornstarch, and water; stir until well-mixed. Cook over medium heat stirring constantly, until thick. Pour into casserole dish, over peaches and blueberries. Mix fruit gently to coat.

Combine flour, sugar, baking powder and salt in a large mixing bowl. Stir to blend. Add milk and soft butter. Mix with a fork or beaters until fairly smooth. Spoon dough over fruit mixture.

Mix in small bowl sugar, cinnamon, and nutmeg. Sprinkle mixture over dough.

Bake at 375 for 40-45 minutes.
