Hearty-But-Healthy Chili

 

Serves 4-6 .

 

Ingredients:

1 package of lean ground beef (about 1 1/4 pounds)

2 14-ounce cans of diced tomatoes

2 14-ounce cans of corn (or 4 cups fresh or frozen corn)

2 14-ounce cans of pinto or black beans (or 1 of each, depending on preference)

1 package taco seasoning

1 package powdered ranch dressing

1 to 2 cups of water, depending on desired consistency

 

For toppings:

Shredded cheddar cheese

Fresh chopped cilantro

 

Instructions:

In large pot, brown meat on medium-high heat. Stir in taco seasoning and 1 cup of water into pot with browned meat. Add canned (and/or fresh) ingredients, ranch seasoning, and another 1/2 to 1 cup water (as desired). Cook over low heat for 5 to 10 minutes. Garnish with cilantro and shredded cheese. Serve with jalapeno cornbread or tortilla chips.
