Chicken Skewers with Peanut Sauce
Note from Marie: As one of my very good friends said once, "At a party, people will eat anything on a stick!" And she's exactly right. As a result, if you decide to make these for a party, you might want to double (or triple) the recipe to make sure you have enough. I made these yummy chicken skewers at a recent party, and they were the first dish to disappear. Thankfully, I had extra sauce and marinated chicken on hand, so I just popped another batch (and another batch, and another batch) into the oven during the party. Keep any extra bamboo skewers soaking in the water; otherwise, they'll burn.
Yields about 24 appetizers.
Ingredients:
2 boneless, skinless chicken breasts
2 Tablespoons soy sauce
2 Tablespoons teriyaki marinade
Juice of one lemon
2 Tablespoons olive oil
2 cloves garlic, minced
1 teaspoon yellow curry powder
Freshly ground black pepper
30 bamboo skewers, soaked in water for at least 20 minutes
For Sauce:
1/3 cup natural, crunchy peanut butter
1/3 cup unsweetened coconut milk
2 teaspoons light brown sugar
1 Tablespoon soy sauce
1 Tablespoon teriyaki marinade
1 teaspoon cayenne pepper
Instructions:
With sharp knife, cut chicken breasts into strips and then bite-sized pieces. Place chicken in zip lock bag. Add soy sauce, teriyaki marinade, lemon juice, oil, garlic, curry powder, and black pepper. Close bag and mix so all chicken is coated. Let chicken marinate for 20 minutes or up to 1 hour.
While chicken is marinating, make sauce. In medium-sized saucepan, combine peanut butter, coconut milk, sugar, soy sauce, teriyaki marinade, and cayenne pepper. Stir to combine. Warm sauce over low heat, stirring occasionally.
Turn the oven to broil. Line baking sheet with aluminum foil. Thread one chicken piece onto the end of each skewer. Place skewered chicken on baking sheet (about 6-8 per sheet) and broil for 3 minutes. Remove from oven and turn chicken (skewers will be hot!). Broil for an additional 3-4 minutes, or until brown.
Remove sauce from heat, and pour into festive bowl. Serve immediately with skewered chicken. Enjoy!
