Skip-A-Step Chicken Salad Sandwiches
Makes about four sandwiches.
Ingredients:
1 pre-cooked rotisserie chicken (skip the cooking step to save time!)
3-4 pickles (either sweet pickles or dill)
¼ cup chopped walnuts
¼ cup diced apples
½ cup light mayonnaise
Optional: ¼ cup diced red or green onion
4 lettuce leaves
4 slices of muenster cheese
Eight slices of fresh sourdough bread
Instructions:
Chop cooked chicken into small pieces, and place in medium-size bowl. Dice pickles, apples, and walnuts, and add to chicken. Mix in mayonnaise to taste.
Spread mayonnaise or mustard on bread. Spread chicken salad over mayo or mustard. Put lettuce piece and cheese slice on top of the chicken salad, and put the other piece of bread on top of that. Cut the sandwich in half.
Marie's Tip: For a healthier version, I use just the chicken breast and not the dark meat. I also leave off the cheese. If you are on a low-carbohydrate diet, try the chicken salad served over a bed of fresh butter lettuce with tomato slices on the side.
