Easy Chicken Chalupas
Serves 4-6.
Ingredients:
1 pre-cooked rotisserie chicken
6-8 flour tortillas
2 15-ounce cans black beans, drained (but save liquid)
3 Roma tomatoes, diced
2 cups iceberg lettuce, shredded
1/2 cup fresh cilantro, chopped
1 cup white or cheddar cheese, shredded
1/2 cup salsa (optional, for garnish)
1/2 cup lite sour cream (optional, for garnish)
Instructions:
Preheat oven to 400 F. Arrange tortillas on foil-lined baking sheet. Bake until golden brown (about 8 minutes). Remove from oven and set aside.
Remove chicken and shred with your hands or a fork. (Only use the white meat for a healthier option.) Place into medium-sized bowl.
Pour beans into medium-sized sauce pan. Add some of the liquid to keep the beans moist. Mash the beans to create a nice thick bean paste -- similar to refried beans but without the fat. Add additional liquid as necessary to obtain desired thickness. Warm over medium heat. Place in medium-sized bowl when ready to serve.
For buffet style serving, place tortillas on a platter at the beginning of the line. Follow with a bowl of mashed black beans, the bowl of shredded chicken, and then bowls of place chopped tomatoes, shredded lettuce, chopped cilantro, shredded cheese, salsa, and sour cream. In assembly-line fashion, spread beans over baked tortilla. Add chicken and desired toppings.
