Cabbage with Peas Sabzi

Serves 4-6.

 

Ingredients:

2 tablespoons olive oil

1/2 green cabbage, sliced very thin (quick tip: buy bagged, pre-washed and shredded cabbage!)

2 cups frozen peas, thawed and washed

1/2 teaspoon cumin powder

1/2 teaspoon tummeric powder

1 teaspoon fennel powder

1 teaspoon mango powder (optional -- may be hard to find in regular grocery)

Salt to taste

Pinch of paprika or cayenne pepper powder (optional)

 

Instructions:

Heat oil in a large non-stick pan on high for a 1 1/2 minutes. Quickly add cumin seeds, tummeric, and frozen peas. Stir together and cook for 1 minute.

Add cabbage. Mix well.

Turn heat to medium. Cover the pan. Stir once every 1-2 minutes, and then cover with lid again. Do this for 5-7 minutes or until cabbage is tender. 

Add fennel, salt, and paprika (if desired) and mango powder (if desired).  Stir well. Turn heat to low. Cover and cook 1-2 more minutes.

Remove from heat, but keep covered until ready to serve.
