Broiled Asparagus

 

Serves 4-6.

 

Ingredients:

2 pounds thin asparagus

2 tablespoons extra virgin olive oil

Salt and fresh ground pepper to taste

2 tablespoons balsamic vinaigrette (optional)

 

Instructions:

Adjust rack to upper-most position in oven. Heat the broiler.

Break off tough ends of asparagus. Place in a large bowl and toss with oil, salt, and pepper. Place in a single layer on a foil-lined baking sheet.

Broil for about 4 minutes. Remove sheet from oven and turn asparagus. Broil again for 4-5 minutes, or until asparagus is tender and lightly browned.

**If you want to add more flavor to this dish, after arranging the asparagus on a platter, sprinkle with balsamic vinaigrette.
