Marinated Broccoli Salad

 

Serves 6.

Ingredients:

2-3 large stalks of broccoli

12 cherry tomatoes

12-15 black olives

1/2 red onion (if desired)

1 cucumber, peeled

1 small jar marinated artichoke hearts

 

For dressing:

1 1/2 ounces white balsamic vinegar

4 1/2 ounces extra virgin olive oil

Salt and freshly ground pepper to taste

 

Instructions:

Cut broccoli tops off stems. Steam broccoli tops just until slightly tender but still a little crunchy. Cool completely.

In large bowl, add cooled broccoli, tomatoes, olives, onions, artichoke hearts, and thinly sliced cucumber.

In small bowl, mix vinegar and oil, and add salt and pepper. Pour dressing over vegetables and toss. Let vegetables marinate for about 10 minutes or longer.
