The Austin Breakfast Muffin
Serves 1 (multiply for more!).
Ingredients:
1 whole grain English muffin
2 slices low-sodium turkey breast (from the deli)
1 slice of tomato
1 slice mozarella cheese
5-6 pieces diced avocado
Kosher salt and freshly ground black pepper to taste
Instructions:
Preheat oven to 375 F.
Slice English muffin in half. Toast English muffin in oven for 5 minutes, or until golden brown.
Remove muffin from oven. Place two slices of turkey on muffin. Place one slice of cheese on top of the turkey. Return to over for 5 minutes or until cheese is melted and turkey is slightly brown on edges.
Remove from oven and add large slice of tomato. Topp with avocado chunks, salt, and pepper.
Serve immediately.
